Apple and Balsamic Slaw

Simple, sweet, sour, crispy and refreshing slaw.

Ingredients

  • 2 cups shredded purple cabbage
  • 1/2 cup shredded carrots
  • 1 large apple - shredded
  • 1/2 cup shredded celery
  • 1/4 cup sunflower seeds
  • 2 tablespoons olive oil
  • 1/4 cup balsamic vinegar
  • 1 tablespoon sugar
  • pinch of salt - plus more to taste
  • Pinch of black pepper

Instructions

  • Prepare all vegetables and the apple and add to a large bowl then toss together.
  • In another bowl, add olive oil, balsamic vinegar, sugar, salt and pepper and whisk together.
  • Pour over the slaw along with the sunflower seeds and give it a good toss.
  • Serve chilled.
