Middle Eastern Cauliflower Salad

Similar to a tabbouleh salad, this twist uses cauliflower rice and Za'atar seasoning, it's delicious!

Ingredients

  • 1/4 cup red onion - finely diced
  • 1 cup cauliflower rice - cooked and cooled
  • 1 teaspoon Za'atar seasoning
  • 1 tablespoons dried parsley or 1/4 cup fresh parsley - chopped
  • 5 fresh mint leaves - minced
  • pinch of salt
  • juice of 1 lemon
  • 3 tablespoons olive oil
  • 1/4 cup feta - optional
  • 1/4 cup Pomegranate seeds - optional

Instructions

  • In a large salad bowl, add red onion, cauliflower rice, Za'atar seasoning, parsley, mint and salt.
  • Squeeze the lemon over the salad and add the olive oil, stir well.
  • Add feta and pomegranate seeds if using and enjoy!
