"School Lunch Salad"

Ingredients

  • 1 cup chopped romaine lettuce
  • 1 cup spinach
  • 1/2 cup chopped cucumbers
  • 1/4 cup croutons
  • 1/4 cup frozen peas - rinsed
  • 1/4 cup chopped bell pepper
  • 1/4 cup sliced black olives
  • 1/4 cup shredded cheese
  • 1 tablespoon slivered almonds
  • 1/4 cup chopped ham or turkey breast
  • 1/4 cup chopped tomatoes
  • 1 hard boiled egg
  • Optional:
  • cottage cheese
  • pickled beets
  • sunflower seeds
  • 3 tablespoons ranch or bleu cheese dressing

Instructions

  • Add everything in a bowl, add dressing. You can mix ahead of time or mix and eat at the same time.
