Instructions
Add all ingredients into the blender and blend on high until smooth, pausing to scrape down the sides of the blender to make sure everything gets mixed in.
Heat griddle or pan to medium high heat then adjust temperature so it’s not too hot. Spray cooking surface with oil. Pour batter onto griddle or pan, once you see bubbles in batter flip over and continue cooking until its cook through. I use about 1/8th of a cup to make 5" pancakes.
Top with strawberry syrup, fresh strawberries and whipped cream or maple syrup.
