Amazing Blueberry Scones

These amazing blueberry scones are so decadent and delicious. They will make you think you are eating in a coffee house that has a full time pastry chef in the back whipping up these beauties! In reality, they come together really quickly and are super easy, even for the most novice of cooks! I say scones are the best way to let out your inner pastry chef! I have been creating different variations of scones this past year and they never disappoint!

My daughter who isn’t a blueberry baked goods fan tried a bite of these and exclaimed “these are REALLY good mom!” so to me that means mission accomplished because I got a non-blub believer to believe! Woohoo!

How to make:

2 cups Flour

1/4 cup Sugar

1 Tablespoon Baking Powder

1/2 teaspoon Salt to a mixing bowl and mix.

Next add 6 Tablespoons Cold Butter (I use salted butter in this recipe) cut into little chunks.

Next add 1 teaspoon Lemon Zest.

Add 1 cup Blueberries (fresh or frozen, thawed) mix into the flour mixture so the blueberries get coated in flour.

2 Eggs

1/3 cup Milk

1 teaspoon Vanilla

Mix ingredients gently with a rubber spatula or hand to avoid smashing the blueberries too much. Once mixed, plop (thats the official word for this) the dough onto a lightly greased cookie sheet and roughly form into a circle.

You can either slice into 8 wedges and bake separately or bake as one large circle and cut after, either way works fine. Bake 14-15 minutes or until golden. Some of the butter will come out of the dough and that is ok. It will help give the scones a buttery crisp on the outside edges which makes them even more yum worthy.

Glaze with The vanilla glaze for a little extra yumminess or you can stay traditional and sprinkle the dough with course sugar pre baking or post baking.

For the Glaze:

2 tablespoons butter

1 Cup Powdered Sugar

1 Tablespoons Milk

1 teaspoon Vanilla

1/4 teaspoon salt

Instructions:

Blend together the glaze ingredients then pour over scones after they come out of the oven.

Ingredients

  • 2 cups Flour

  • 1 cup Blueberries Fresh or frozen thawed

  • For the Glaze
  • 1 cup Powder Sugar
  • 1 Tablespoons Milk
  • 1 teaspoon vanilla
  • 1/4 teaspoon Salt
  • 2 tablespoon butter

Instructions

  • Preheat oven to 425 F.
  • Mix Flour, Sugar, Baking Powder and Salt together.
  • Add the cold diced butter and mix into the flour with a fork or two knifes.
  • Add Lemon Zest and Blueberries and mix so blueberries get coated in flour mixture.
  • Add Eggs, Milk and Vanilla and gently mix with a rubber spatula or your hand until a dough starts to form. Do not over mix and smash the blueberries, The dough will rustic with the chunks of butter and bits of flour.
  • Form into a round circle on a cookie sheet, you can slice into 8 sections and bake individually or bake in one big circle and then cut. Bake for 14-15 minutes or until the center is no longer doughy and the top and sides are golden brown. Butter will come out of the dough during cooking and that is perfectly normal.
