Lemon Poppy Seed Scones

These lemon poppy seed scones are a delicious breakfast, brunch or snack. They are easy to make too. I always say scones are one of the easiest ways to channel your inner pastry chef. So if you want to turn out a delicious creations for yourself, family or friends you should give these a try!

I use a lemon glaze or a lemon pomegranate glaze on these. It adds a little acidity and brightness to the scone and I honestly just love to dip my scone in the glaze bowl so I get some with each bite. Recipes for both the lemon glaze and the pomegranate lemon glaze are down below.

These scones will last about 3-4 days on the counter in a container so they don’t dry out too much.

What you need to make lemon poppy seed scones:

makes 8

  • 2 cups flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup sugar
  • 1 tablespoon poppy seeds
  • zest of 1 large lemon
  • 1/2 cup butter – cold cut into chunks
  • 1 tablespoon lemon juice
  • 1/2 cup milk
  • 1 egg

Lemon glaze:

  • 1/2 cup powdered sugar
  • 2 teaspoon lemon juice

Lemon pomergrante glaze:

  • 1/2 cup powdered sugar
  • 1 teaspoon lemon juice
  • 1 teaspoon pomegranate juice

Instructions

  1. Preheat the oven to 425 F.
  2. In a bowl, add flour, baking powder, salt, sugar, poppy seeds, lemon zest and mix together.
  3. Add cold butter chunks and mix into the flour mixture until butter is pea sized.
  4. Add lemon juice to the milk and let it sit for a minute.
  5. Add egg and lemon milk mixture to the flour mixture and stir together.
  6. If the mixture is too dry, add a little milk or if it’s too wet add a little flour until it forms a dough that can form a ball. Don’t over work or knead the dough, just as soon as it forms a ball, it’s ready.
  7. Dump onto a piece of parchment paper and cut into 8 wedges.
  8. Place on a greased cookie sheet with enough room for them to rise and spread slightly and bake for 12-14 minutes or until golden brown on bottom.
