Blackberry Lemon Scones

 These blackberry lemon scones are easy, fancy and super delicious! You can create a bakery in your own kitchen with this yummy breakfast! The berries are juicy and perfectly compliment the biscuit and cakey texture of the scones.

What you need to make blackberry lemon scones:

Makes 8 Large Wedges

2 cups Flour

1/2 cup Sugar

1 Tablespoon Baking Powder

1/2 teaspoon Salt

6 Tablespoons Cold Butter (I use salted butter in this recipe)

1 teaspoon Lemon Zest

1 cup Fresh or Frozen Blackberries (using frozen will lengthen the cooking time)

2 Eggs

1/3 cup Milk

1 teaspoon Lemon Juice

Glaze

2 Tablespoons Melted Butter

1 Teaspoon Lemon Juice

2 Tablespoons Milk

1 Cup Powdered Sugar

Pinch of Salt

Instructions

  1. Preheat over to 425 F.
  2. Combine flour, sugar, baking powder, salt and lemon zest.
  3. Stir.
  4. Add Cold butter and work into the flour mixture until a crumbly mixture forms.
  5. Add the eggs, milk and lemon juice and mix. Don’t over mix, just enough to incorporate the ingredients.
  6. Gently fold blackberries into the dough.
  7. Turn Bowl over onto a greased or parchment paper lined cookie sheet so it forms a disc.
  8. Slice into 8 large wedges and separate them on the cookie sheet.
  9. Bake 15-16 minutes or until the batter is not wet in the center of the scone. If you are using frozen berries it will take closer to 20 minutes.
  10. Remove from the oven.
  11. In a small bowl combine the glaze ingredients and pour over the top of the scones. enjoy!
  12. Can be frozen and eaten later!

Ingredients

  • 6 Tablespoons Cold Butter cut into little chunks. Mix into flour mixture using 2 knifes or a fork roughly mix the butter into the flour. There will still be little chunks of butterthe dough when you are done., I use salted butterthis recipe
