Thai Chicken Tacos

Give me Thai food any day of the week and I will be a happy girl, surprisingly I also say the same thing about tacos! So why not combine the two to make a doubly delicious meal? These Thai chicken tacos are super yummy!

what you need

Serves 6 people

1 1/2 pounds of chicken tenders
Chicken Marinade
1 tablespoon sweet chili sauce
2 tablespoons soy sauce
1 tablespoon salt
3 tablespoons sugar
1 teaspoon garlic powder
1 teaspoon ginger powder

Toppings
2 carrots – shredded
1 red bell pepper
1-1/2 cups shredded purple cabbage
1 cup cilantro torn roughly
1/2 cup peanuts
Thai peanut sauce (RECIPE HERE)

Instructions

Preheat oven to 375 F.

Mix all of the chicken marinade ingredients together in a large bowl. Add chicken tenders to bowl and stir around until they are all covered in sauce.
Place on a greased or parchment paper lined cookie sheet and bake for 35 minutes.

Cut all the vegetables and toppings. Prepare like a taco, top with peanut sauce. Enjoy!
