Easy Cheddar Broccoli Soup

I love this easy cheddar broccoli soup! It’s super simple and really quick to make! It is low carb too if that is what you are looking for. If you aren’t looking to cut carbs, it’s still delicious and you can add some bread along side of this soup for a hearty and delicious dinner! My overnight rolls RECIPE HERE would be great with this!

I was on the phone with my mom the last time I made this soup. She knew I was starting dinner and cooking while we talked. I finished the soup while we were still talking. I tasted some and I said “Yum! Mom this soup is so good!”. She said, “What?!? It’s done already?!?” She was shocked at how fast it was done! It’s seriously that quick, easy and delicious!

What you need to make this easy cheddar and broccoli soup:

Instructions

  1. In a medium stock pot, add the diced onions, butter and salt and stir over medium-high heat for 1-2 minutes.
  2. Add chicken stock and stir.
  3. Add broccoli and simmer for 4 minutes.
  4. In a small bowl combine cornstarch and water.
  5. Bring soup to a boil and whisk in the cornstarch.
  6. Reduce heat to a simmer.
  7. Stir in cheddar cheese, black pepper and cream.
  8. Serve.

Ingredients

  • 1/3 cup onions - diced
  • 1 tablespoon butter
  • 1/2 teaspoon salt
  • 4 cups chicken stock
  • 3 cups broccoli - raw or frozen, roughly chopped
  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • 1 cup cheddar cheese
  • 1/4 teaspoon black pepper
  • 2 tablespoons cream or milk of choice
