Thai Salad

You can prep this salad the night before if you are bringing it into work or won’t have prep time before lunch. I love the tastes of Thai food and this salad is fresh, easy and delicious! The peanut sauce is something I could drink and I literally lick the bowl whenever I make it.

Ingredients

  • 3 cups crispy romaine lettuce
  • 1 cup cooked chicken breast - chopped into large chunks
  • 1/4 cup peanuts
  • 1/2 cup shredded carrots
  • 1/4 cup green onions - diced
  • 1/2 cup shredded cabbage - purple or green
  • 1/2 cup bell peppers - sliced into thin strips
  • optional - Cilantro
  • For the peanut dressing:
  • 2 tablespoons peanut butter
  • 2 tablespoons honey
  • 2 tablespoons sweet chili sauce
  • 2 tablespoons soy sauce
  • 2 tablespoon rice vinegar
