Creamy Beef And Tomato Gnocchi

This creamy beef and tomato Gnocchi is a super delicious, quick and easy dinner option! I use store bought gnocchi but homemade would be fabulous in this too! This dish is full of Italian flavors and I could probably eat the entire batch if I was left to my own devices! If I am being realistic though, it will feed 4 adults well.

What you need to make creamy beef and tomato gnocchi:

serves 4

1 pound potato Gnocchi – you could use cauliflower gnocchi too
1 pound ground beef
2 tablespoons olive oil
2 tablespoons garlic – minced
1 – 14.5 ounce can of diced tomatoes
3 tablespoons dried basil
4 tablespoons cream cheese
1/2 teaspoon salt
1 cup spaghetti sauce
1/2 cup Parmesan cheese

Instructions

Cook Gnocchi according to package directions.
In another large pan, add ground beef, olive oil and garlic and cook until beef is brown.
Add diced tomatoes, basil, cream cheese, salt, spaghetti sauce and Parmesan cheese until the cream cheese is melted into the sauce.
Add the gnocchi and stir until everything is incorporated.
Serve.
