Deviled Eggs

Deviled eggs are a total throw back to the days when ambrosia salad reigned supreme. However, they are still beloved and can still cause a buzz in the kitchen for good reason. They are a little bit indulgent and totally delicious. They are also super easy to make.

Hard boil the eggs using my method below and it will help you when it comes to peeling the egg. 90 percent of the time these eggs are easy to peel. I have had that off batch that was a little trickier but this way does work well.

Also, you can make these eggs as rustic or as elegant as you would like. I personally don’t mind them looking rustic but I have used a piping back before to make them look more polished, so it is up to you.

What you need to make deviled eggs:

makes 6 egg halves

3 eggs – hard boiled, sliced in half lengthwise with yolks removed
2 tablespoons mayonnaise
Paprika for on top

Instructions

To hard boil eggs:

  1. Place eggs in a pot that has a lid.
  2. Fill with warm water.
  3. Bring to a boil uncovered, and then place lid on top.
  4. Turn heat off and leave for 10 minutes for perfect and easy to peel hard boiled eggs.
  5. Cool eggs down.

To make the deviled eggs:

  1. Slice in half lengthwise and remove yolks and put them in a separate bowl.
  2. Add mayo to egg yolks and mash together and stir until smooth.
  3. Spoon or pipe mixture into egg centers.
  4. Top with paprika.
  5. Serve chilled.
