Indian Deviled Eggs

I love the spice blend garum masala that is usually used in Indian recipes like chicken tikka masala. It’s warm and almost sweet. The spice tastes great in these Indian Deviled eggs. They are surprisingly delicious. I top mine with sweet pickles because it totally compliments the spice blend. You can obviously omit the sweet pickles if you are not a fan and it’s still tasty.

I used to hate sweet pickles or bread and butter pickles with a passion. I don’t know when exactly that changed but now I crave them on occasion. Salty dill pickles will always have my heart but on occasion the sweet pickle calls my name. They work really well with this recipe for Indian deviled eggs.

Here they are without the pickles and just a sprinkle of garum masala.

What you need to make Indian deviled eggs:

makes 6 deviled eggs

  • 3 eggs – hard boiled, sliced in half lengthwise with yolks removed
  • 2 tablespoons mayonnaise
  • 1 teaspoon garum masala
  • optional sweet pickles diced for on top

Instructions

To hard boil eggs:

  1. Place eggs in a pot that has a lid.
  2. Fill with warm water.
  3. Bring to a boil uncovered, and then place lid on top.
  4. Turn heat off and leave for 10 minutes for perfect and easy to peel hard boiled eggs.
  5. Cool eggs down.

To make the deviled eggs:

  1. Slice in half lengthwise and remove yolks and put them in a separate bowl.
  2. Add mayo and garum masala to egg yolks and mash together and stir until smooth.
  3. Spoon or pipe mixture into egg centers.
  4. Top with sweet pickles or more garum masala.
  5. Serve chilled.
