Roasted Red Pepper Deviled Eggs

I love roasted red peppers. They are so flavorful and make any dish delicious. These roasted red pepper deviled eggs are no exception. They are easy to make and a fun twist on the traditional deviled eggs.

If you want a easy way to boil your eggs so that they are easy to peel, check out my method below. Most of the time this method makes eggs that’s shells come off really easily.

What you need to make Roasted Red Pepper deviled eggs:

Instructions

To hard boil eggs:

  1. Place eggs in a pot that has a lid.
  2. Fill with warm water.
  3. Bring to a boil uncovered, and then place lid on top.
  4. Turn heat off and leave for 10 minutes for perfect and easy to peel hard boiled eggs.
  5. Cool eggs down under cold water.

To make the deviled eggs:

  1. Slice in half lengthwise and remove yolks and put them in a separate bowl.
  2. Add mayo and diced red bell peppers to egg yolks and mix together until smooth.
  3. Spoon or pipe mixture into egg centers.
  4. Top with more roasted bell peppers.
  5. Serve chilled.
