Citrus Pepper Salmon

I love salmon and this citrus pepper salmon is a delicious and simple way to prepare it. It has salt, pepper, lemon and lime flavors that really help highlight the beautiful salmon flavor.

Salmon is finished cooking when the salmon flakes when gently pulled at with a fork. You want it to be moist and not dry so watch for that moment when it becomes flaky. You want to get a sear on the skin but then reduce the heat. You want to cook the fish 90-95 percent on it’s skin to retain the moisture in the fish.

What you need to make citrus pepper salmon:

Instructions

  1. Season salmon with salt and pepper.
  2. In a bowl add lemon juice and lime juice and set aside.
  3. Heat olive oil and butter in a pan on high heat.
  4. When the oil heats up, just before it starts smoking, add salmon skin down and let it sear for about 2 minutes then add lemon and lime juice and reduce heat.
  5. Cover with a lid and let it cook until fish is about 95 percent cooked. Flip over for the last 5 percent of cooking. fish is done when it flakes with a fork.
  6. Remove from pan and serve.
