Dill Lovers Chicken Salad Sandwich

I love this dill lovers chicken salad sandwich! I am a huge dill fan and this dish really celebrates it in an easy and delicious way! You can use fresh dill or dried dill. I usually have dried dill in my spice cabinet so using dried makes it really easy. However, if I have fresh dill I use it because fresh it takes it to another level.

I love to use precooked chicken for this recipe. Canned chicken with the juices drained, rotisserie chicken chopped up or frozen cooked chicken slices, chopped up all work great! You can also boil and shred your chicken if you want to make it from scratch.

This chicken salad sandwich goes great with some spinach or crispy lettuce for a elevated sandwich but it’s also decadent and delicious with just the filling stacked high. It’s great on bread, I have it pictured on homemade bread, or in a croissant or wrap.

Instructions

  1. In a bowl, add chicken, chopped pickle, celery, paprika, green onions, fresh dill (start with 2 tablespoons, you can add more if you want more after it’s all mixed together), mayonnaise, Dijon mustard, paprika, salt and black pepper.
  2. Stir everything together, taste mixture and add more dill if you want more.
  3. Spoon onto sandwiches and add spinach or lettuce if desired.
  4. Enjoy! (The most important step)

Ingredients

  • 12.5 ounces of shredded or chopped chicken breast or about 1 1/4 cups- cooked canned, rotisserie
  • 1/4 cup dill pickle – chopped
  • 2 tablespoons pickle juice
  • 1/4 cup celery – finely chopped
  • 1/4 teaspoon paprika
  • 3 green onions – finely sliced
  • 2-3 tablespoons fresh dill or 1 teaspoon dried dill – start with 2 tablespoons dill then adjust to preference
  • 3 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon paprika
  • Pinch of salt
  • pinch or grind of black pepper
  • Spinach or crispy lettuce – optional
  • Bread wrap or croissant for serving
