Bananas Foster Baked French Toast

This bananas foster baked French toast is a fun take on a baked French toast. It has banana, a rum flavored custard that the sourdough soaks up and it’s coated with honey bunches of oats cereal which gives it a fun crisp and flavors on top.

Baked French toast is super convenient because you can just put it into a dish and let it do all the work in the oven. This recipe can be prepared the night before for a quicker and easier breakfast in the morning.

I love this recipe with some syrup, whipped cream and some fresh bananas. I think the use of baked and fresh bananas offers some fun flavors.

  1. Preheat oven to 400 F.
  2. In a large bowl, add banana, eggs, salt, rum extract, brown sugar, cinnamon and milk and whisk together.
  3. Add the sourdough chunks and stir well.
  4. Pour into a greased 8 x 8 pan, top with honey bunches of oats cereal, sprinkle top with salt, top with butter chunks and brown sugar.
  5. Bake for 40 minutes.
  6. Serve with syrup, whipped cream, fresh banana’s or toppings of choice.
