Smashed Garlic Potatoes

Ingredients

large potatoes - golden
russet or red
3
tablespoons
butter
3
tablespoons
olive oil
1
tablespoon
garlic - minced
Sprinkle of salt
Instructions
Pre- heat oven to 400 F.
Wash potatoes and roast them in the oven for 1 hour.
Slice potatoes in half.
In a pan heat butter and olive oil over medium high heat.
Place potatoes sliced side down and using the back of a bowl or cup press down so the potato smashes slightly into the oil and butter in the pan.
Brown on that side for roughly 3 minutes or until some color comes.
Flip to the other side and brown for 2 minutes.
Add garlic to the pan and stir it around the potatoes.
Sprinkle salt over the tops of the potatoes.
Once garlic is golden and fragrant, about 1 minute, remove from the pan and serve.
