Smashed Garlic Potatoes

Delicious and easy crispy baked potatoes.

Ingredients

  • 5 large potatoes - golden russet or red
  • 3 tablespoons butter
  • 3 tablespoons olive oil
  • 1 tablespoon garlic - minced
  • Sprinkle of salt

Instructions

  • Pre- heat oven to 400 F.
  • Wash potatoes and roast them in the oven for 1 hour.
  • Slice potatoes in half.
  • In a pan heat butter and olive oil over medium high heat.
  • Place potatoes sliced side down and using the back of a bowl or cup press down so the potato smashes slightly into the oil and butter in the pan.
  • Brown on that side for roughly 3 minutes or until some color comes.
  • Flip to the other side and brown for 2 minutes.
  • Add garlic to the pan and stir it around the potatoes.
  • Sprinkle salt over the tops of the potatoes.
  • Once garlic is golden and fragrant, about 1 minute, remove from the pan and serve.
