Smashed Garlic Potatoes

These smashed garlic potatoes are like baked potato meets a french fry with some yummy garlic flavors. I made these for my St. Patrick’s day themed dinner because they are kind of golden. You can use golden potatoes if you want them even more gold! They are soft inside with a caramelized and delicious outside crisp.

Here is what you need to make these smashed garlic potatoes:

  • 5 large potatoes – golden, russet or red
  • 3 tablespoons butter
  • 3 tablespoons olive oil
  • 1 tablespoon garlic – minced
  • Sprinkle of salt

Instructions:

  1. Pre- heat oven to 400 F.
  2. Wash potatoes and roast them in the oven for 1 hour.
  3. Slice potatoes in half.
  4. In a pan heat butter and olive oil over medium high heat.
  5. Place potatoes sliced side down and using the back of a bowl or cup press down so the potato smashes slightly into the oil and butter in the pan.
  6. Brown on that side for roughly 3 minutes or until some color comes.
  7. Flip to the other side and brown for 2 minutes.
  8. Add garlic to the pan and stir it around the potatoes.
  9. Sprinkle salt over the tops of the potatoes.
  10. Once garlic is golden and fragrant, about 1 minute, remove from the pan and serve.
