Keto Ranch Chicken Bombs

These keto ranch chicken bombs are a delicious way to get the fats needed for the keto diet and you'll love them even if you aren't eating keto.

Ingredients

  • 1 cup shredded chicken - rotisserie chicken boiled and shredded or canned chicken works great
  • 1 cup cheddar cheese
  • 1/3 cup cream cheese
  • 1 tablespoon ranch dressing
  • dash of black pepper
  • dash of sriracha or hot sauce - optional
  • 1 egg
  • 1 1/2 cups almond flour
  • pinch of salt
  • Spray olive oil for outside of bombs

Instructions

  • Mix together the chicken, cheddar cheese, cream cheese, ranch dressing, black pepper, sriracha or hot sauce if using it.
  • Roll into 9 balls.
  • Add an egg to a bowl and whisk it.
  • Add almond flour to a bowl and a pinch of salt.
  • Dip balls in almond flour, then into egg then back into almond flour until ball is coated in almond flour.
  • Repeat for all of the chicken bombs.
  • If using an air fryer, bake for 10 minutes at 400 F.
  • If using an oven, preheat oven to 400 F. and bake for 20 minutes or until outsides are firm and cheese begins to slightly leak out the sides.
