Ingredients
3apples - peeledcored and chopped
2tablespoonsapple pie spice
1teaspoonvanilla extract
1/3cupyogurt
2eggs
2cupsflour
1 1/2cupssugar
1tablespoonbaking powder
1teaspoonsalt
1cupmilk
1/2cupbutter
For the crumble topping:
1/2cupflour
1/2cupsugar
1/4cupbutter - melted
splash of vanilla
dash of salt
1teaspoonapple pie spice
Instructions
Preheat oven to 350 F.
Add the chopped or shredded apples, apple pie spice, vanilla, yogurt, eggs, butter and milk together and blend well. For smooth muffins, you can blend in a food processor or blender.
Add the flour, sugar, baking powder and salt to the liquid mixture and mix well.
Pour batter into muffin tin liners.
To make the crumble topping; in a separate bowl, add flour, sugar, butter, vanilla, salt and apple pie spice and stir together until a crumble forms.
Sprinkle the crumble over the top of the muffin batter.
Bake for roughly 22-25 minutes or until the muffin's center pops up and the muffins look cooked through.
