Apple Pie Muffins

These are super moist muffins with all of the flavors of apple pie.

Ingredients

  • 3 apples - peeled cored and chopped
  • 2 tablespoons apple pie spice
  • 1 teaspoon vanilla extract
  • 1/3 cup yogurt
  • 2 eggs
  • 2 cups flour
  • 1 1/2 cups sugar
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 cup milk
  • 1/2 cup butter

For the crumble topping:

  • 1/2 cup flour
  • 1/2 cup sugar
  • 1/4 cup butter - melted
  • splash of vanilla
  • dash of salt
  • 1 teaspoon apple pie spice

Instructions

  • Preheat oven to 350 F.
  • Add the chopped or shredded apples, apple pie spice, vanilla, yogurt, eggs, butter and milk together and blend well. For smooth muffins, you can blend in a food processor or blender.
  • Add the flour, sugar, baking powder and salt to the liquid mixture and mix well.
  • Pour batter into muffin tin liners.
  • To make the crumble topping; in a separate bowl, add flour, sugar, butter, vanilla, salt and apple pie spice and stir together until a crumble forms.
  • Sprinkle the crumble over the top of the muffin batter.
  • Bake for roughly 22-25 minutes or until the muffin's center pops up and the muffins look cooked through.
