Apple Pie Muffins

These apple pie muffins are super moist and filled with all the flavors of an apple pie. I love to make these all year round! They are perfect for feeding the crew or using up extra apples.

These can be made super smooth by blending this recipe in the blender or food processor or you can shred or finely dice the apples to make these a little chunkier. These taste great both ways and is completely up to your preference.

I have some kiddos who get scared off by chunks of fruit in things. They however, don’t mind if the apples are shredded as the apple blends into the muffin really well.

The crumble topping is a bakery style crumble and it gives them a little extra yumminess on top. It is optional and the muffins are great without it too.

What you need to make these apple pie muffins: (Printable recipe is below)

Makes 22-24 muffins

  • 3 apples – peeled, cored, chopped or shredded
  • 2 tablespoons apple pie spice
  • 1 teaspoon vanilla extract
  • 1/3 cup yogurt
  • 2 eggs
  • 2 cups flour
  • 1 1/2 cups sugar
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 cup milk
  • 1/2 cup butter

For the crumble topping:

  • 1/2 cup flour
  • 1/2 cup sugar
  • 1/4 cup butter – melted
  • splash of vanilla
  • dash of salt
  • 1 teaspoon apple pie spice

Instructions

  1. Preheat oven to 350 F.
  2. Add the chopped or shredded apples, apple pie spice, vanilla, yogurt, eggs, butter and milk together and blend well. For smooth muffins, you can blend in a food processor or blender.
  3. Add the flour, sugar, baking powder and salt to the liquid mixture and mix well.
  4. Pour batter into muffin tin liners.
  5. To make the crumble topping; in a separate bowl, add flour, sugar, butter, vanilla, salt and apple pie spice and stir together until a crumble forms.
  6. Sprinkle the crumble over the top of the muffin batter.
  7. Bake for roughly 22-25 minutes or until the muffin’s center pops up and the muffins look cooked through.
