Preheat the oven to 375 F,
Add all dry ingredients to a bowl and stir together. Add the eggs, vanilla and coconut oil and mix together. Mix in the unsweetened shredded coconut, pecans and chocolate chips into the mixture.
On a greased cookie sheet, roll out 18 cookie dough balls. Bake for 15-17 minutes or until the tops are golden and the middles are not wet. They will still seem slightly wobbly when you pull them out but will set when they cool.
