Healthy Coconut Pecan Chocolate Chip Cookies!

These cookies are not only delicious but also totally healthy for you! These healthy coconut pecan chocolate chip cookies are sweet, chewy, and taste ultra indulgent! They are about 180 calories per cookie and only 12 total carbohydrates, with 6.1 grams of those carbohydrates being from sugar! Plus, you get to subtract the 2.5 grams of fiber from that total carb count which leaves you with 9.5 total carbohydrates per cookie! There are also 2.2 grams of protein per cookie!  Just for a little reference, a traditional chocolate chip cookie from Subway has about 200 calories and 30 grams of carbohydrates, with 18 grams of sugar! So this recipe is less than 1/3 the total carbohydrates and 1/3 the total sugars of a traditional chocolate chip cookie.

If you are watching your blood sugar levels like I have to do, this is a great and really delicious dessert, even if you are not watching that this is still a great and really delicious dessert! You could use straight stevia, dairy and sugar free chocolate chips to really cut your carbohydrates down even more, if that is your goal.

If you are worried about taste, rest assured, I have been a cookie connoisseur my whole life and know a good cookie when I taste one and this one is amazing! The nutritional information is based on verywellfit.com’s nutritional calculator and I did not do the science and testing on each individual cookie. Ha Ha! So it is there to give you an idea of the nutritional facts for this recipe, numbers may slightly vary based on the size of your cookies and different brands of ingredients used. However, the nutritional fact should not change by more than just a few numbers.

 

Here is what you need

1/2 cup Coconut Oil

1/2 cup Truvia Sugar cane blend (this cuts your sugars down by %75 of traditional white sugar but does not have the bitter taste from using straight Stevia! That is why I love to use this blend!)

2 Tablespoons Coconut Flour

1/2 cup Almond Meal/ Almond Flour (it goes by both names)

1/2 cup Quick Oats

1/2 teaspoon Salt

1 teaspoon Baking Soda

1 teaspoon Vanilla

2 Eggs

1/2 Cup Unsweetened Shredded Coconut

1/4 cup unsalted Pecans

1/2 cup Semi-Sweet Chocolate Chips

Preheat the oven to 375 F,

Add all dry ingredients to a bowl and stir together. Add the eggs, vanilla and coconut oil and mix together. Mix in the unsweetened shredded coconut, pecans and chocolate chips into the mixture.

On a greased cookie sheet, roll out 18 cookie dough balls. Bake for 15-17 minutes or until the tops are golden and the middles are not wet. They will still seem slightly wobbly when you pull them out but will set when they cool. Enjoy!
