1/2 Cup Chopped Bell pepper (red, orange, yellow or green)
1 teaspoonSalt
1/2 teaspoon black pepper
1 teaspoon Garlic Powder
4 Tablespoons olive oil
Instructions
Pre-heat oven to 375 F.Season the onions and peppers with 1/2 tsp salt and dash of black pepper.Cook the onions and peppers over medium high heat in a frying pan with a little olive oil until the onions start to soften and get translucent, about 4-5 minutes.Season the potatoes with the rest of the salt, pepper and Garlic Powder then add to the pan with onions and peppers, stir over medium heat for about 2 minutes.Dump everything into a glass baking dish and bake uncovered for about 45 minutes, stirring occasionally during the baking.
