Oven Baked “Dutch Oven” Potatoes

Oven Baked “Dutch Oven” Potatoes are easy to make, healthy and work as the perfect weeknight dinner side dish!  They will give you the dutch oven flavor without the dutch oven prep and clean up time.

These are a lighter and healthier recipe though I do love me some greasy, meaty, a.k.a. heart attack potatoes but this isn’t the post for those, though they will inevitable be on this blog…. I’ll be sharing my sisters famous recipe and trust me you won’t want to miss that one!

All you will need are onions, potatoes (any variety will work, I like reds or russets), bell peppers, salt, black pepper, garlic powder and olive oil.

You will need to dice your onions, and bell peppers and I like to cut my potatoes in half lengthwise then do half moon slices about 1/5 of an inch wide.

Pre-heat oven to 375 F.

Season the onions and peppers with 1/2 tsp salt and dash of black pepper. Cook the onions and peppers over medium high heat in a frying pan with a little olive oil until the onions start to soften and get translucent, about 4-5 minutes. Season the potatoes with the rest of the salt, pepper and Garlic Powder then add to the pan with onions and peppers, stir over medium heat for about 2 minutes.

Dump everything into a glass baking dish and bake for 40-45 minutes, stirring occasionally during the baking.

What you need to make Healthy Oven Baked “Dutch Oven” Potatoes

Ingredients

  • 6 meduim Potatoes Russet, red or golden work best
  • 1/2 Cup chopped onion.
  • 1/2 Cup Chopped Bell pepper (red, orange, yellow or green)
  • 1 teaspoon Salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Garlic Powder
  • 4 Tablespoons olive oil

Instructions
