Red Pepper Hummus

Easy and delicious homemade hummus! Perfect for chips, vegetables or in salads and sandwiches.

Ingredients

  • 1 - 15 ounce can Garbanzo beans or chickpeas - drained and rinsed
  • 1/2 teaspoon salt
  • 1/4 cup roasted red bell pepper - I use jarred but you can make your own.
  • 5 tablespoons olive oil
  • dash garlic powder
  • 1 tablespoon lemon juice
  • 1 tablespoon diced roasted red bell pepper for on top
  • olive oil for on top

Instructions

  • Drain and rinse the garbanzo beans and if you want really smooth hummus, remove the skins from each bean. If you don't mind a little texture, then leave them on.
  • Add garbanzo beans to a blender or food processor.
  • Add salt, roasted red bell pepper, olive oil, garlic powder and lemon juice.
  • Blend and pulse until it's smooth.
  • Add diced red bell pepper on top and drizzle with some olive oil.
  • Enjoy!
