Red Pepper Hummus

I love red pepper hummus and so does my daughter. It’s her favorite! I love roasted red bell peppers in general and when it’s added to hummus it’s delicious! This homemade red pepper hummus is super easy and is super tasty. I love it with crackers and vegetables or as a spread on sandwiches. It only takes a few ingredients and comes together in less than 5 minutes.

My recipe does not use tahini because I found it tastes just as delicious without it. I do love tahini but this recipe doesn’t need it. You can of course add it if you are used to using it, I would add 1 tablespoon of tahini.

What you need to make red pepper hummus:

makes ~1 and 1/2 cups

  • 1 – 15 ounce can Garbanzo beans or chickpeas – drained and rinsed
  • 1/2 teaspoon salt
  • 1/4 cup roasted red bell pepper – I use jarred but you can make your own.
  • 5 tablespoons olive oil
  • dash garlic powder
  • 1 tablespoon lemon juice
  • 1 tablespoon diced roasted red bell pepper for on top
  • olive oil for on top

Instructions

  1. Drain and rinse the garbanzo beans and if you want really smooth hummus, remove the skins from each bean. If you don’t mind a little texture, then leave them on.
  2. Add garbanzo beans to a blender or food processor.
  3. Add salt, roasted red bell pepper, olive oil, garlic powder and lemon juice.
  4. Blend and pulse until it’s smooth.
  5. Add diced red bell pepper on top and drizzle with some olive oil.
  6. Enjoy!
