Southwest Black Bean Burgers

Flavorful and healthy black bean burgers!

Ingredients

  • 1/4 cup onion - diced
  • 1 teaspoon olive oil
  • 2 tablespoon water
  • 1/2 cup cooked sweet potato
  • 1 cup black beans
  • 1/2 cup oats
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon chili powder
  • 1/4 cup flour or gluten free baking mix- to dust burgers in
  • oil for searing burgers
  • Suggested burger toppings:
  • roasted green chili peppers
  • fresh tomato
  • ketchup with chipolte seasoning or adobo sauce added
  • avocado
  • lettuce
  • grilled onion
  • spinach
  • jalapenos

Instructions

  • In a pan, add diced onion and olive oil and cook until onion starts to brown. Add water to onions and cook until water evaporates and onions soften fully.
  • add cooked onions, sweet potato, black beans, oats, onion powder, salt, black pepper, garlic powder and chili powder into a food processor or blender and blend until mixture is roughly mushed together, a little texture is good but mixture should be able to hold together.
  • Press into 4 black bean burgers and dip in flour or gluten free baking mix, this will help keep the burgers together when cooked.
  • Add oil to a pan and sear each burger off until a slightly crisp crust forms on the each burger.
  • Served on your favorite bun with desired toppings.
