Southwest Black Bean Burgers

These southwest black bean burgers are delicious! They are packed flavor as well as plant based protein and fiber. The black bean is mixed with sweet potatoes and spices to give these a delicious southwest flavor while still being vegan/ plant based.

I recently had my doctor discuss going plant based more in my personal diet, I am not a full vegan but I am trying to eat that way during the week to help with my PCOS. So I have been busily developing delicious plant based recipes that will fit my nutritional needs and my flavor standards.

Another reason I love this recipe is that it can be frozen or meal prepped ahead of time and it only takes about 10 minutes to meal prep these when you have a pre-roasted sweet potato or 20 minutes if you microwave your sweet potato, suggested directions for that are below. This makes for a quick and easy meal during the week when I am too busy to cook.

You can roast the sweet potatoes ahead of time or to save time or try speeding up the process by slicing it into chunks then microwaving it in a microwave safe steam bag or covered microwave safe dish with a little water in the bottom for 6-7 minutes or until soft. You can also dice it and boil it for about 10 minutes.

What you need to make southwest black bean burgers:

  • 1/4 cup onion – diced
  • 1 teaspoon olive oil
  • 2 tablespoon water
  • 1/2 cup cooked sweet potato
  • 1 cup black beans
  • 1/2 cup oats
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon chili powder
  • 1/4 cup flour or gluten free baking mix- to dust burgers in
  • oil for searing burgers

Optional toppings:

  • roasted green chili peppers
  • fresh tomato
  • ketchup with chipolte seasoning or adobo sauce added
  • avocado
  • lettuce
  • grilled onion
  • spinach
  • jalapenos

Instrucions

  1. In a pan, add diced onion and olive oil and cook until onion starts to brown. Add water to onions and cook until water evaporates and onions soften fully.
  2. add cooked onions, sweet potato, black beans, oats, onion powder, salt, black pepper, garlic powder and chili powder into a food processor or blender and blend until mixture is roughly mushed together, a little texture is good but mixture should be able to hold together.
  3. Press into 4 black bean burgers and dip in flour or gluten free baking mix, this will help keep the burgers together when cooked.
  4. Add oil to a pan and sear each burger off until a slightly crisp crust forms on the each burger.
  5. Served on your favorite bun with desired toppings.
