Easy Waffles

These easy waffles are delicious and we love them for breakfast, brunch, lunch, linner and dinner!

One of the main reasons I started this blog was so my kids could have all my recipes one day when they are big and feeding themselves and/or a family. This is kind of my legacy to them and a journal of sorts. If they are ever feeling sad, lonely or want a taste of home they can come on here, hear my voice through words and make something I made for them in love. I knew I needed to include a waffle recipe for them and here it is! My son has been obsessed with these waffles lately and wants them every meal it seems!

What you need

Makes ~8 waffle squares

3 Large Eggs – separate the whites and the yokes

2 cups Flour

1 1/2 tablespoons Baking Powder

1/3 cup Sugar

1 teaspoon Salt

4 Tablespoon Butter – melted

1 1/2 cups Milk

Instructions

Separate your eggs, whites and yokes, Add whites to a mixing bowl and with an electric mixer with a whisk attachment, beat the eggs until they are stiff peaks.

In another bowl, mix the flour, baking powder, sugar, salt. Stir. Add the egg yokes, butter and milk, mix until batter is smooth.

Gently fold in the egg whites into the batter until it is incorporated but the air is not all pushed out.

Cook on your waffle maker. Enjoy.
