Buffalo Chicken Celery Boats

These buffalo chicken celery boats are so easy to make and taste super delicious! They make for a great healthy and low carbohydrate lunch or dinner and are perfect for a party appetizer! The grocery store deli does most of the work! you just need to grab some celery, buffalo chicken breast, cream cheese, blue cheese crumbles and hot sauce the next time you are at the store!

I try to watch my carbohydrates to regulate my blood sugar; so I feel good and don’t get too cranky. These buffalo chicken celery boats make the perfect snack, meal, appetizer or whatever you want it to be and are great for keeping me off the blood sugar roller coaster! I always feel super full and satisfied when I make these and my blood sugar thanks me!

I love to load mine with lots of hot sauce and Bleu cheese and the celery provides the perfect cool crunch to balance out the cream cheese, chicken, hot sauce and Bleu cheese!

What you need

Serves 4-6 people

12 celery stalks- rinsed, dried, and tops and very bottoms removed.
1 – 8 ounce package cream cheese
1 pound deli sliced Buffalo Chicken breast
Hot Sauce
Blue Cheese Crumbles

Instructions

  1. Fill cleaned and dried celery stalks with cream cheese.
  2. Bunch up deli buffalo chicken breasts and place on top of cream cheese in the center of the stalks.
  3. Add as much hot sauce as you want.
  4. Sprinkle tops with blue cheese crumbles.
  5. Slice into bite size segments if using for a party appetizer.
