Gluten Free Honey Oat Blender Bread

This gluten free honey oat blender bread is super delicious! It’s made in a blender and is super easy to make! I love the texture of this bread, it’s kind of like a hearty non-sweet muffin. It’s scrumptious! It would be great with some jam or nut butter. My 2 year old daughter who is not gluten free thought it was yummy too!

I dedicate this recipe to my momma who is my gluten free inspiration. I can’t wait for her to try this recipe! Love you mom!

This recipe uses old fashion oats and gluten free baking mix or you can use cassava flour in place of the gluten free baking mix. Cassava flour is becoming more and more common and is made from the yuca root, it is also referred to as tapioca flour, medioc or mandioca and a few other names. It can be found at most grocery stores with a natural products section or online at sites like amazon.

What you need to make this gluten free honey oat blender bread:

makes 1 loaf of bread
  • 2 cups old fashioned oats
  • 1/2 cup gluten free baking mix
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 tablespoon salt
  • 1/4 cup honey
  • 3 eggs
  • 1/4 cup butter – melted
  • 1 cup milk of choice

Instructions:

  1. Preheat oven to 350 F.
  2. In a blender add oats, gluten free baking mix, baking powder, baking soda, and salt. Pulse mixture a little to break up the oats.
  3. Add honey, eggs, butter and milk and blend mixture until smooth.
  4. Scrape down the sides of the blender so all of the oat flour mixture gets incorporated.
  5. Grease a bread pan and add the batter.
  6. Smooth top of the batter.
  7. Drizzle a honey on top and sprinkle with a few old fashion oats.
  8. Bake for 40 minutes.
  9. Allow the bread to cool completely before cutting.
  10. Enjoy!
