Dr. Seuss Breakfast Board

I love Dr. Seuss! His books and personal wisdom he imparted onto all of us made this world a better place. My kids also love his fun stories so this Dr. Seuss breakfast board was perfect for them! His books are so whimsical and fun and I had so much fun creating a bright and colorful board inspired by his books.

I wish you all could have heard the sounds of excitement my kids made when they saw me putting this board together! There were lots of “mom! I love it” and “blue fish!” “green eggs!” “I’m so excited!” They were totally thrilled about it! (as you can see in the picture below where my daughter could hardly wait for me to snap a picture so she could eat a pink pancake fish!)

This board is super easy to put together and totally practical for a busy mom, dad, grandma, grandpa, aunt, sister, brother, uncle, friend, whoever you are!

The pancakes are made using a pancake mix with food coloring added in, then cut into fishes and feet with cookie cutters. The sausages were pre-cooked jimmy dean sausages, the “ham” was Canadian bacon heated up, the hash brown cakes were pre-frozen and I cooked them in my air fryer and the fruit was just sliced up and assembled. Maple syrup, ketchup and simple fried eggs dyed green (which I will show you how to do below) made up the rest of this fun board.

For the pancakes:

“One fish, two fish, red fish, blue fish”

  • Use your favorite pancake mix.
  • In two separate bowls, add blue and red (or pink, like I did) to the batter.
  • Pour the pancakes like normal onto a skillet and when finished cooking, use a cookie cutter to cut them into fishes. My fish cookie cutter made the perfect dipping sized pancakes! The kids loved them!

  • Following the same instructions for the fish pancakes.
  • Use a foot shaped cookie cutter to cut out orange feet pancakes.

Star fruit: The Star Belly Sneetches

“The Sneetches got really quite smart on that day. The day they decided that Sneetches are Sneetches. And no kind of Sneetch is the best on the beaches. That day, all the Sneetches forgot about stars and whether they had one, or not, upon thars.” – The Sneetches by Dr. Seuss.

  • Star fruit can be found at grocery stores that carry exotic fruit.
  • They are around $3.50 per piece of fruit, which doesn’t make them ideal for daily snacking but it could be a chance to introduce your kids to a new fruit. It tastes a little like an apple and a kiwi mixed together. All you have to do is slice the fruit and you have stars!
  • If you cannot find it, you can buy pineapple and cut it into stars or cantaloupe, watermelon or whatever fruit you’d like.

Fried eggs: “Green Eggs and Ham”

“Try them, try them, and you may! Try them and you may, I say.” 
– Dr. Seuss, Green eggs and ham.

  • Spray frying pan with non-stick spray then add eggs.
  • Start cooking the eggs on medium high heat.
  • Sprinkle tops with salt.
  • In a separate bowl add 1/2 cup water and a few drops of green food coloring.
  • Pour the water onto the eggs then cover pan with a lid.
  • Tilt the pan side to side so the eggs get covered in the green water.
  • Once eggs are cooked to your liking. Remove from heat.
  • Drain eggs on a piece of paper towel and add to the board.

Strawberry banana skewers: for the “Cat in the hat”

  • Use colorful sucker sticks, popcycle stick or skewer to alternate the strawberry and banana slices.

Oranges: Dr. Seuss’ color scheme

  • Dr. Seuss uses lots of orange in his books so I love weaving orange slices wherever I can fit them on the board.
