Chicken Cacciatore

This chicken cacciatore recipe is pure Italian comfort food! I remember eating this as a child and thinking it was delicious! Years went by before I made it again and shared it with my family.

My kids love this recipe and the food on the plate always gets cleared. This recipe is also pretty easy with a little prep work but the majority of the time is hands off while the dish bakes. We serve this with some pasta, garlic bread, a salad or green beans.

What you need to make chicken cacciatore:

Serves 4-6 people

  • 1 small onion – diced
  • 2 garlic cloves – minced
  • 1 green bell pepper – diced
  • 2 tablespoons olive oil
  • 1 tablespoons butter
  • 1/2 cup flour
  • 1 tablespoon Italian herbs
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tsp garlic powder
  • 4 chicken quarters, (bone in, skin can be on or off depending how much fat you want in the dish.)
  • 1 – 14.5 ounce can diced tomatoes
  • 1 cup spaghetti sauce
  • 1 tablespoon Italian herbs

Instructions

  1. Preheat oven to 375 F.
  2. In a bowl, combine, flour Italian herbs, salt black pepper and garlic powder.
  3. Coat each side of the chicken quarters with the flour mixture and set aside.
  4. Heat olive oil and butter in a large frying pan.
  5. Add the green peppers, garlic and onions.
  6. Sauté until softened slightly then remove from pan and set aside.
  7. Next, in the remaining oil, place the chicken leg quarter and very quickly brown on each side.
  8. Then arrange all the quarters in the pan and add the onions, garlic and peppers back in.
  9. Now add diced tomatoes with the juice.
  10. Add spaghetti sauce and Italian herbs and try to stir slightly to mix the ingredients around the chicken.
  11. Cover pan if it’s oven proof or move to oven safe dish and cover with aluminum foil.
  12. Bake for 1 hour.
  13. Uncover and bake for an additional 10 minutes.
  14. Serve on it’s own or with pasta and or garlic bread.
  15. Enjoy!
