Air Fryer Chicken Taquitos

Guess what? I love these homemade air fryer chicken taquitos more than any pre-made or frozen ones AND they take the same amount or even less time to make! If you have leftover rotisserie chicken or leftover chicken from another meal, this is the perfect recipe to use it up in! You can also boil and shred a chicken breast if you don’t have any on hand.

Seriously they are super easy to make. The air fryer makes these perfectly crunchy! They are crisp, cheesy, flavorful and delicious! So if you are at a loss of whats for dinner or lunch, make some guacamole (easy guacamole recipe here) and scoop up a bowl of sour cream and salsa and get ready for an easy and quick fiesta of flavor!

Here is what you need to make air fryer chicken taquitos:

Makes 6-9 taquitos – depending how big or small you want them. Serves 2 people.

  • 1 cup shredded chicken breast – like rotisserie, boiled or leftover chicken
  • 1/8 teaspoon chili powder
  • 1/4 teaspoon onion powder
  • 2 tablespoon cream cheese – heated up until it’s soft
  • 1/2 cup cheddar cheese
  • 6-9 corn tortillas – try to get as fresh of tortillas as you can – dried out ones will crack, mine do crack slightly when cooking.
  • Spray oil

Instructions

  1. Combine chicken breast, chili powder, onion powder, cream cheese and cheddar cheese in a bowl.
  2. Mix together until everything is well mixed.
  3. Heat tortillas in the microwave for 15-20 seconds so they are softer and easier to roll without breaking.
  4. Place around 1-2 teaspoons mixture in the middle and roll them up.
  5. Place in your air fryer basket next to each other.
  6. Spray oil on tops of taquitos.
  7. Bakes on 400 for 10 minutes.
  8. Enjoy!
