“School Lunch Salad”

“School lunch salad” makes me feel like I’m back in high school. School lunch gets a bad wrap but my high school always seemed to have good food and I LOVED the salad bar! I would also a grab roll so I could dip the roll in ranch or bleu cheese dressing. Anyone else do that? This salad combo is just tasty with yummy flavors all working together. It’s a good blend of textures and flavors and your salad will be gone before you know it.

I also always grabbed an apple during lunch in high school and if you could catch a picture of me I would probably always be munching on an apple between activities.

High school was good to me, it was a bit of a blur because I stayed really busy. I enjoyed it, had some good friends that made me laugh. I spent a lot of time doing sports, I was a swimmer and every year from September to February I swam all the time. I also did track and field my freshman year then switched that out for theater productions in the spring my sophomore through senior years. I also did choir, art, ceramics and drawing and some dance.

  • 1/2 cup chopped cucumbers
  • 1/4 cup croutons
  • 1/4 cup frozen peas - rinsed
  • 1/4 cup chopped bell pepper
  • 1/4 cup sliced black olives
  • 1/4 cup shredded cheese
  • 1 tablespoon slivered almonds
  • 1/4 cup chopped ham or turkey breast
  • 1/4 cup chopped tomatoes
  • 1 hard boiled egg
  • Optional:
  • cottage cheese
  • pickled beets
  • sunflower seeds
  • 3 tablespoons ranch or bleu cheese dressing
