Brownies

Who doesn’t love a ooey, gooey, chocolaty and delicious brownie!?!? These brownies are rich, gooey and everything I love about a brownie! They are fairly easy to make too. They taste great on there own or with some ice cream!

When I was having babies, the hospital I delivered my children at always served the most amazing brownies and ice cream. We even joked about having more kids just so I could get the brownies and ice cream. However, when we had our third child the hospital had revamped the menu and the brownies with ice cream got cut for calorie reasons…. valid reason I guess…. but… I just gave birth so I didn’t really care about eating my calories in the form of chocolaty goodness, ha ha!

Someone started a petition to bring it back and they gathered a few hundred signatures. However, the petition was to no avail and the brownie was gone from the menu forever. So now I just have to make the equivalent at home and I don’t even have to give birth to eat it! Woohoo!

What you need to make these brownies:

makes 1 – 9 x 13 pan

1 cup butter
1/4 cup vegetable oil
2 cups semi-sweet chocolate chips
2 cups sugar
1 tablespoon vanilla
1 1/2 cups flour
1 teaspoon salt
1 tablespoon cocoa powder
3 eggs
3 egg yolks

Instructions

  1. Pre-heat the oven to 350 F.
  2. In a saucepan, add butter, vegetable oil and chocolate chips.
  3. Stir over low heat until all of the chocolate chips are melted and the mixture is smooth.
  4. Remove mixture from heat.
  5. Add the sugar and vanilla to the chocolate mixture and stir.
  6. In a mixing bowl, add flour, salt, cocoa powder and shift together.
  7. Add the warm chocolate and butter mixture to the flour along with the eggs and egg yolks.
  8. Blend all those ingredients until it’s smooth.
  9. Grease a 9 X 13 pan.
  10. Bake for ~30-35 minutes.
