What you need to make this healthy chocolate chip cookie skillet:

Makes 1 – 6 inch skillet or 2 – 3 inch round pans – serves 2

Instructions

  1. Pre-heat oven to 375 F.
  2. In a bowl, add almond flour, coconut sugar, flour, salt, baking soda and stir together.
  3. Add the egg, oil and vanilla and stir.
  4. Stir in dark chocolate chips and add to greased skillet or pans.
  5. Bake for 10-12 minutes or until the batter is to your desired done-ness. I like mine a little doughy still.
  6. Serve as is or top with cool whip and sugar free chocolate syrup or hot fudge.
  7. Enjoy!

  • 1/2 cup almond flour
  • 1/3 cup coconut sugar – monk fruit or stevia can also be used
  • 1 tablespoon flour gluten free baking mix works too
  • pinch of salt
  • 1/4 teaspoon baking soda
  • 1 egg
  • 1 tablespoon vegetable oil or butter
  • 1/2 teaspoon vanilla extract
  • 1/4 cup dark chocolate chips or sugar free chocolate chips
  • Optional – cool whip and dark chocolate reduced sugar hot fudge for on top.
