Healthy Banana Honey Walnut Muffins

I love muffins and these healthy banana honey walnut muffins are one of my favorites! They are easy to make and filled with protein and energy packed ingredients so they are a perfect snack or breakfast item. I love to have them on hand for after school or work. They are refined sugar free and can easily be made gluten free.

I love walnuts in muffins! It reminds me of something a grandma would make in a good way, it’t homey, comforting and delicious. The honey in this recipe perfectly complements the banana and gives these the best sweet flavor without being overly sweet.

What you need to make healthy banana honey walnut muffins:

Instructions

  1. Preheat oven to 350 F.
  2. Smash the bananas with the honey until they are fairly smooth.
  3. Add eggs and vanilla and blend with banana mixture.
  4. In another bowl, add flour, almond flour, baking powder and salt and stir together then add to banana mixture and stir.
  5. Add the milk and blend batter until it’s smooth.
  6. Add half of the walnuts and into batter.
  7. Spoon into muffin tins, sprinkle other half of walnuts on top of the muffins.
  8. Bake for 18-19 minutes or until muffins look baked in the centers.
  9. Drizzle muffins with a little honey after they are done baking.
