Healthy Banana Cinnamon Muffins

These healthy banana cinnamon muffins are delicious! They are lower in carbs and sugars than a traditional muffin but still have a great texture and wonderful flavor. I top these muffins with slivered almonds, a few oats and a drizzle of honey and it makes them a tasty treat.

These muffins can be made gluten free and dairy free. I used gluten free baking mix in the muffins pictured below but regular flour will work as well. I also used unsweetened coconut milk but any milk will work just fine.

What you need to make healthy banana cinnamon muffins:

Makes 20 muffins

  • 1 cup flour or gluten free baking mix
  • 1 cup almond flour
  • 1/4 cup coconut flour or flour
  • 1/3 cup coconut sugar
  • 2 large bananas
  • 3 eggs
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 teaspoon salt
  • 1 tablespoon cinnamon
  • 1 cup milk of choice – I used unsweetened coconut milk
  • oats – to sprinkle on top
  • slivered almonds – to sprinkle on top
  • honey – to drizzle on top

Instructions

  1. Preheat oven to 350 F.
  2. Mash bananas with coconut sugar.
  3. Add all other ingredients EXCEPT the oats, slivered almonds and honey, then mix until smooth.
  4. Fill each muffin about 2/3rds the way full.
  5. Sprinkle each muffin with oats, almonds and a drizzle of honey.
  6. Bake for 15-18 minutes, they will still feel slightly wobbly when they come out (the almond flour doesn’t set totally until it cools) but a tooth pick should come out clean.
  7. Let cool slightly and enjoy!
