Pumpkin Chocolate Chip Muffins

These pumpkin chocolate chip muffins taste great all year round and are a fall favorite! They are super moist and delicious and filled with the warm flavors of pumpkin pie along with chocolate chips. They are perfect for breakfast, desserts or snacks.

Chances are you can find pumpkin pie mix in stores all year round so these muffins can be made all year round. I usually have a can of it hanging out in my pantry from the previous holiday season and I love to use it up by making these muffins.

These can be frozen and pulled out of the freezer in the mornings for a quick and delicious breakfast. The perfect grab and go meal or snack. I have found they last about 1 month in the freezer before they start to take on the freezer taste and get slightly goopey.

What you need to make pumpkin chocolate chip muffins

Makes 18 muffins

  • 1 1/2 cups flour
  • 2 tablespoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup sugar
  • 1/2 cup butter
  • 1 1/2 cup pumpkin pie mix
  • 1/2 cup milk
  • 1 cup chocolate chips

Instructions

  1. Pre-heat oven to 350 F.
  2. Add flour, baking powder, salt and sugar and stir together. Add the butter, pumpkin pie mix, milk, and stir well.
  3. Fold in the chocolate chips.
  4. Spoon into muffin tins.
  5. Bake for ~18 minutes or until the muffins are risen and look cooked through.
