Cucumber Sushi Salad

I love sushi and this cucumber sushi salad tastes like sushi but it’s easier to make and low carb. I love all the flavors in this bowl and when I make it I usually eat it for lunches for a whole week and I never get sick of it!

You can add a little heat to this or keep it out it can easily be personalize to your preference. The imitation crab can also be swapped out for shrimp or any other protein of choice. You could also add some cream cheese, red chili flakes, eel sauce, grilled lemon slices or any of your favorite sushi toppings or fillings.

What you need to make cucumber sushi salad

serves 1 person

  • 1/2 cucumber – sliced
  • 3 crab sticks – chunked up
  • 1/4 cup avocado – chunked
  • 1 sheet nori – torn into bite size pieces
  • 1 green onion – sliced thinly
  • 1/4 cup chili pepper – diced (optional)
  • 2 tablespoon rice wine vinegar
  • 1/2 teaspoon sesame oil
  • 1 teaspoon spicy mayo
  • 2 tablespoons french fried onions – optional
  • sesame seeds

Instructions

  1. Slice cucumber, crab sticks, avocado, nori strip, green onion and chili pepper and add to a bowl.
  2. Add rice wine vinegar and sesame oil and toss ingredients in mixture.
  3. Top with spicy mayo, french fried onions and sesame seeds.
  4. Enjoy!
