Low Carb and Dairy Free Hot Chocolate

I love this low carb and dairy free hot chocolate! It is super decadent and delicious and you would honestly never know that it is low carb and dairy free!

I love hot chocolate around the fall and winter months but with my blood sugar issues I can seldom indulge in it and when I do indulge I ultimately pay the price of really bad blood sugar numbers and I feel awful. So I generally try to avoid it. Then I created this recipe and it is a heaven send! It tastes super delicious and it’s low in carbs without tasting weird or fake and it is dairy free.

It has a nice texture and tastes like you are drinking real hot chocolate, you know the kind you get at a restaurant that has been cooked on the stove with real chocolate in it! Plus, it has the added bonus of cacao powder which means, yes this hot chocolate is even healthy for you but it tastes so indulgent that won’t even cross your mind.

This recipe can use either coconut milk, almond, soy, oat milk or whatever milk substitute you prefer. If you want a super indulgent treat then add some canned coconut milk and a few drops of almond extract and it tastes like a almond joy! You can also add some cinnamon to make this Mexican hot chocolate, a few drops of peppermint oil to make this mint chocolate, hazelnut flavoring, you get the idea!

This recipe can also be chilled and it makes a super delicious low carb and dairy free chocolate milk! If you are planning on using it as a chocolate milk then don’t add the optional coconut oil or ghee.

Instructions

  1. In a heavy bottomed pot add water, milk of choice, cacao powder and bring to a boil.
  2. While mixture is coming to a boil then mix together the cornstarch and water in a small bowl.
  3. Whisk in the cornstarch and water and boil for 1 minute then reduce to a simmer.
  4. Add vanilla extract, monk fruit sweetener and pinch of salt and stir.
  5. Let it cool to a drinkable temperature and enjoy!

  • 4 cups water
  • 1 cup milk of choice – coconut almond, soy, oat, etc.
  • 1/3 cup cacao powder
  • 1 teaspoon cornstarch
  • 1 tablespoon water
  • 1 tablespoon vanilla extract
  • 1 cup monk fruit sweetener
  • pinch of salt
  • (optiona1/4 teaspoon coconut oil or ghee- this makes it really decadent but isn’t a necessity
