
Minestrone Soup
I love a good minestrone soup! This one is extra hearty and full of vegetables and layers of flavor! It will make you feel extra homey and warm when you dive in!

I like my minestrone soup to be pretty hearty with protein, vegetables, beans and noodles. This recipe has Italian sausage, carrots, bell peppers, zucchini, tomatoes, kidney beans, green beans and noodles and it’s full of goodness!
What you need to make minestrone soup:
serves 10
- 1 pound ground mild Italian sausage
- 1 onion – diced
- 1 tablespoon olive oil
- 1 tablespoon garlic – minced
- 1 1/2 cups carrots – diced
- 2 small zucchini – diced
- 1 green bell peppers – diced
- 4 cups water
- Dash cayenne pepper
- 1/4 teaspoon black pepper
- 1 tablespoon Italian herbs
- 1 teaspoon onion powder
- 2 bay leaves
- 32 ounces beef stock
- 15 ounces tomato sauce
- 28 ounces canned diced tomatoes
- 1 – 15 ounce can kidney beans – drained and rinsed
- 1 cup green beans – fresh or frozen and chunked
- 1/3 cup Parmesan cheese
- 1 1/2 cups large macaroni noodles – dry noodles
- Top with more Parmesan cheese
Instructions
- In a stock pot, add Italian sausage, onion, olive oil, garlic, carrots and zucchini and bell peppers and cook until sausage is cooked through.
- Add water, cayenne pepper, black pepper, Italian herbs, onion powder, bay leaves, beef stock, tomato sauce, canned tomatoes, kidney beans, green beans, Parmesan cheese and macaroni noodles and cook until noodles are done to liking.
- Add salt to taste, serve with Parmesan cheese on top and enjoy!
