Pellet Grill Cornbread

I love cornbread and this pellet grill cornbread is the perfect way to bake it during the heat of the summer when you don’t want to heat up your house or any time of the year when you want a delicious side dish.

This cornbread can also be baked in an oven and it will still taste delicious. The pellet grill will give it that delicious pellet grill undertone.

One of the optional add in ingredients that I have listed below is to add corn chunks into the bread. To do this, saute the corn in a pan with butter so it gets almost caramelized and it will give the cornbread unexpected nuggets of chewy, caramelized corn goodness in every bite.

My kids like it smooth with no chunks so that is usually how I make it. I also like to add more butter and honey to the top of the freshly baked cornbread.

What you need to make pellet grill cornbread:

Makes 1- 12 inch cast iron pan

Instructions

  1. Preheat pellet grill to 350 F.
  2. Grease a 12 inch cast iron skillet or equivalent baking pan.
  3. In a mixing bowl, add flour, corn meal, baking powder, salt, sugar, honey, butter, sour cream, eggs, milk and corn if using it.
  4. Mix well then pour into pan and bake on the grill for 30-35 minutes or until the cornbread is baked through in the center.

Ingredients

  • 1 cup flour

  • 1 cup sour cream
  • 3 eggs
  • 1 cup milk
  • Optional:
  • 1 cup corn that has been cooked in a pan with 1 tablespoon butter until golden and slightly caramelized
