Cherry Lime and Citron Icebox Cheesecake

This cherry, lime and citron icebox cheesecake is a delicious and easy treat! It uses candied citrons in the mix that add the perfect texture and delicious flavor. The acidity from the lime balances out the sweetness from the candied citron and cherries and cuts through the creaminess from the cream cheese and whipping cream.

This icebox cheesecake is the perfect summertime treat because it requires no cooking or baking! It can be made a day or a week in advance so it’s the perfect no stress entertaining dessert!

Here’s what you need to make cherry, lime and citron icebox cheesecake:

makes 1 – 9″ cake

For the crust:

  • 1 package graham crackers or 1 1/2 cups graham cracker crumbs
  • 1/2 cup salted butter – melted
  • 1/3 cup brown sugar

For the filling:

  • 8 ounces cream cheese – room temperature
  • 1/2 cup sweetened condense milk
  • 1 cup whipping cream
  • 3 tablespoons lime juice
  • zest from 1 lime
  • 1/2 cup candied citron
  • 1/4 teaspoon cherry flavoring
  • 4 drops red food coloring

Garnish:

  • 1 cup whipped cream for topping
  • Candied cherries, candied citrons and lime wedges for garnish

Instructions

  1. In a zip top bag, add graham crackers and smash into small crumbs.
  2. Add melted butter and brown sugar to the bag and mix all together.
  3. Dump crumbs into a 9″ spring form pan and press mixture down against the bottom of the pan.
  4. In another bowl, mix the cream cheese, sweetened condense milk, whipping cream, lime juice and lime zest until mixture gets slightly fluffy, it will still be liquid but have a fluffy texture.
  5. Remove 1 cup of that mixture and place in another bowl.
  6. Add cherry flavoring and red food coloring to that 1 cup of mixture then set aside.
  7. Add candied citron to the other mixture and gently fold it in.
  8. Pour the citron filled mixture into the pan over the graham cracker crust then gently add the cherry mixture over the top and smooth out.
  9. Freeze 4-6 hours or until cheesecake is frozen through.
  10. Garnish with whipped cream, candied cherries, candied citron and lime wedges.
  11. Release spring form pan and mixture will slice easily straight from the freezer, if you have any troubles let it defrost a few minutes then cut into slices. Keep leftovers frozen.
