Healthy Berry Crumble For Two

This healthy berry crumble for two is the perfect summer time dessert! Obviously it still tastes divine all year round but berries are their sweetest in the summer. This crumble is low carb, grain free, can easily be made dairy free, all natural and it’s super easy to make!

You can even cook this in the microwave like I do and it only takes 2 1/2 minutes to cook, which makes for the perfect dessert! I like to top mine with a scoop of cool whip or a dollop of whipped cream but your favorite ice cream on top or no topping is perfectly fantastic as well.

This dessert is also healthy because it’s full of protein, healthy fats, antioxidants, fiber and nutrients. However, I promise you won’t be thinking about nutrition when you eat this, instead you will be focused on how yummy each bites is.

What you need to make healthy berry crumble for two:

Instructions

  1. Add berries, 3 teaspoons coconut sugar and lemon juice together and mix.
  2. Add that mixture into the bottom of a small baking pan, mini casserole dish or glass bowl.
  3. Add remaining 1 teaspoon coconut sugar, coconut oil or butter, almond flour, coconut flour and pinch of salt together and mix until it gets all chunky.
  4. Add on top of the berry mixture.
  5. If making in the microwave: cook for 2:30 or until berries are slightly bubbly.
  6. If making in the oven, preheat to 350 F. and bake for 20 minutes or until berries are bubbly.
  7. Optional, top with cool whip, whipped cream or ice cream.
  8. Enjoy!
