Healthy Banana Honey Muffins

These healthy banana honey muffins are easy to make and lovely for a breakfast for a snack. They are filled with protein and energy packed ingredients so they are a perfect snack too. I love to have them on hand for after school or work. They are refined sugar free and can easily be made gluten free.

The honey in this recipe perfectly complements the banana and gives these the best sweet flavor without being overly sweet. They almond flour in the recipe gives these a great texture too, smooth and hearty.

What you need to make healthy banana honey muffins:

makes 18 muffins

  • 3 bananas
  • 1/3 cup honey – plus more to drizzle on top
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 cup flour or gluten free baking mix
  • 1 and 1/4 cups almond flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk

Instructions

  1. Preheat oven to 350 F.
  2. Smash the bananas with the honey until they are fairly smooth.
  3. Add eggs and vanilla and blend with banana mixture.
  4. In another bowl, add flour, almond flour, baking powder and salt and stir together then add to banana mixture and stir.
  5. Add the milk and blend batter until it’s smooth.
  6. Spoon into muffin tins.
  7. Bake for 18-19 minutes or until muffins look baked in the centers.
  8. Drizzle muffins with a little honey after they are done baking.
