Grain Free Energy Balls

These grain free energy balls are not only delicious but grain free, low carb and packed with healthy fats and protein! They make the perfect snack or pick me up to keep on hand.

These are super easy to make and require no bake time. They are perfect to keep in the refrigerator or a cool place for a quick snack.

I use coconut sugar to sweeten these energy balls but you can use a carb free sweetener if you want lower carbohydrates. I also use sweetened coconut to roll the balls in but you can use unsweetened if you want less carbohydrates too.

What you need to make grain free energy balls:

Makes 18 balls

Instructions

  1. Add peanut butter, coconut sugar, vanilla, pumpkin seeds, sunflower seeds, hemp seeds, dark chocolate chips and almond flour together and blend until smooth.
  2. Roll into balls roughly 1 1/2 inches round.
  3. Roll in the shredded coconut.
  4. Keep in a ziplock bag in a cool place.

  • 1/2 cup smooth peanut butter
  • 2 tablespoons coconut sugar
  • 1 teaspoon vanilla extract
  • 3 tablespoons raw pumpkin seeds
  • 3 tablespoons raw sunflower seeds
  • 3 tablespoons hemp seeds
  • 1/2 cup dark chocolate chips
  • 2 tablespoons almond flour
  • 1/2 cup shredded coconut – sweetened or unsweetened depending on preference
